Sweet and sour pork and white rice and Fresh Pako Salad.

Sweet and Sour Pork

Ingredients:

  • 1 pound boneless, skinless pork shoulder or loin, cut into bite-sized pieces
  • 1/4 cup cornstarch
  • 1 egg, beaten
  • 1/2 cup vegetable oil for frying

Fresh Pako Salad

Ingredients:

  • 50g fresh pako, cleaned and washed
  • 1/4 medium red onion, thinly sliced
  • 1/4 medium tomato, chopped
  • 1/4 small cucumber, thinly sliced (optional)
  • 1 tablespoon chopped shrimp (optional)
  • 2 tablespoons calamansi juice (or lime juice)
  • 1 teaspoon fish sauce
  • 1/8 clove garlic, minced (optional)
  • Pinch of red chili pepper flakes (optional, for spiciness)
  • Salt and freshly ground black pepper to taste

Meal Procedure

  1. Toss the pork pieces with cornstarch. Let it marinate for at least 15 minutes.
  2. Heat the vegetable oil over medium-high heat and fry the pork until golden brown.
  3. Whisk together pineapple juice, ketchup, water, rice vinegar, brown sugar, soy sauce, cornstarch, white pepper, ginger powder, and garlic powder.
  4. Pour the sauce mixture into the pan. Simmer until thickened.
  5. Add bell pepper, onion, and green pepper. Stir-fry until softened.
  6. Add the cooked pork pieces back to the pan and toss to coat with the sauce.
  7. Serve hot.
  8. Bring a small pot of water to a boil. Add the pako and cook for 1-2 minutes.
  9. Combine pako, onion, tomato, cucumber, and shrimp in a bowl.
  10. Whisk together calamansi juice, fish sauce, garlic, and chili pepper flakes. Season with salt and pepper to taste.
  11. Pour the dressing over the salad and toss gently to coat.
  12. Serve immediately at room temperature.
